Abstract
This study examined the assessment architecture of a 59-page illustrated foundational cookery manuscript. Structured document analysis mapped seven content units, their printed explanations, 153 scorable prompts, and the forms of learner evidence they solicit. Most assessment evidence is limited to recognition and recall, with insufficient demonstration, performance criteria, feedback, or reassessment. The article proposes a seven-unit evidence map and a four-part performance portfolio covering planning, monitored execution, product evidence, and reflective justification.
